knitting, what I'm working on... still...
So, I am just knitting away in my room, my windows is open and so is the back door in the living room because it's so Hot!

O.K.....So it smells like there is something burning....

"What are you cooking?!?"  

                                                  "What?"  (yelling from my room)                          
"Somethings Burning."  
 
                       (Putting knitting down, going into living room)  "Well it's not  me."                                

"Well, What are you making?" 
 
                                                   "I'm just boiling Lentils."

"What are you cooking?"

                                                    "Lentils."

"What's Burning?"
                                                    "I don't know, it's outside."

"What are you making for dinner?"

                                                     "Lentils."

"I don't want Lentils! What are you making for dinner?"


                                                       "Chicken and Lentils."

I worked on this while the guys were out riding around...

Baked Bisquick Biscuits! Say that three times fast!

Oh man, you have got to try these!

Garlic Cheese Biscuits!


I got the recipe out of the Biquick CookBook.

2 C Bisquick
2/3 C Milk
1/2 C Shredded Cheddar Cheese
And
2 Tblsp Butter
1/8th Tsp Garlic Powder

Heat Oven to 450 Degrees.

Stir together The Bisquick, milk and cheese till soft dough forms.

Drop by spoonfuls onto ungreased baking sheet. ( it says by 9 spoonfuls, I thought them too small so I dropped 6!)

Bake for about 8-10 minutes, mix butter and garlic together and drizzle over top of biscuits.

Zesty Italian Dressing Chicken


I always make this when I feel really lazy about making dinner.  It's so easy:
Big Baby is stabbing my Potato!

Dump 1cup Zesty Italian Dressing into a big pan over medium heat.
Add 2-3 Tbsp of Honey
Plus 1-2 Tbsp of Vinegar ( I use AppleCider Vinegar cuz that's what I have or you could add lemon juice, something to add some Zestyerness!)

Yeah, Big Baby hates when I make any kind of "naked" chicken, but I think he really liked the potatoes!

And just cook it down.... Always make sure your chicken is cooked through though...I have had that happen... Surprise! Raw Chicken! Oh man! Not Good!

How would you like your steak?

MMMmmmK.... So Big Baby decides we are going to BBQ some steaks. Sound delicious doesn't it?

So of course I go in the kitchen and start to get them marinated.

1 cup Soy Sauce
3/4 cup Vinegar
1 to 1.5 tsp of Pepper
and
1/2 tsp of Garlic Powder


Cover with plastic wrap and let soak for at least 2 or more hours!
So far so good....

Except that Big Baby only knows ONE way to cook them on the BBQ.  WELL DONE!

Poison! It's What for Dinner!

Hmmm... Well my last post was about apples. And Boy oh Boy have I just been doing every thing But writing silly lil recipe stories here!
So I guess I will get back into this with a little story about the Big Baby....
Big Baby was sitting in the chair watching T.V. and I hand him the plate of food. He says
"What's this?"

"whole wheat noodles"

" I don't like them! I don't like any of this!"

"well, it's Healthy"

I walk away and go eat at the table. Silence. I'm just sitting at the table eating when I hear this
"I'm not eating this! What did you do to this? Is Lil Baby eating this? It tastes like something I shouldn't be putting in my mouth! Does this taste like Perfume to you?"

Now, this whole time I thought he was talking about the Chicken. He was talking about the Quinwa! Haha!
So the next thing I know, he's in the kitchen scraping his plate into the garbage. Then he sits down at the table....

He looks at me and says
"Are you trying to poison me? Don't ever do it again! You hide in the corner of the kitchen pretending to be on the phone, when you're really looking into your witches brew book looking for horrible things to feed your family!"
"I'm going to take your book away!"




O.K. and of course You Know there was NO Way I was smothering the Babies food with mushrooms! ROFL! But I did smother mine!

Mushroom Smothered Chicken

Mix together:
1/4 C soy sauce
1 TBsp water and
1/2 tsp garlic powder

Pour over chicken in a big pan on the stove. Heat to boiling, then lower heat to simmer. Cook for about 50 minutes or so, then add a can of 9oz sliced mushrooms. Cook for another 5 to 10 minutes until mushrooms are done. remove chicken and mushrooms, keep warm.

mix up some cornstarch and water, stir slowly into pan juices, stir till it gets kinda thick. Put the chicken and mushrooms back into the pan and coat with yummy pan sauce!

Apples Under Chicken

"What are these Chunks under My Chicken?"

Apples....
"You're trying to Trick me!"

  Why would you put them Under my Food?!"

Big Baby moves from his chair in the living room and brings his plate to the table.... sits down, pouting and picking the apples as far away from the rest of his food as possible....

They're just apples. It's not poison. Try it.

" You know I don't like Apple Pie! What makes you think I would Eat This?"

"The chicken's Good"

Oh yeah! The Chicken's Good!

Chicken With Apples

2Tbsp Butter
2Tbsp Olive Oil

Heat Pan, melt Butter and Olive Oil together.

Season Chicken with Salt, Pepper and 1Tbsp of your Favorite Seasoning ( I used Roasted Garlic and Herb. I like it :) )

Preheat oven to 375 Degrees.

Fry Chicken in hot pan until brown on both sides....



Remove Chicken from pan, set aside. Do Not Drain Pan.

Toss Apples into the pan you just fried the Chicken in and fry till just Tender Crisp, not mushy.



Place Apples in bottom of baking dish, place Chicken skin side up on top of Apples.



Bake for about 30 minutes or until juices run clear.

Apples Under Chicken!

Burnt Out!

Oh my gosh! You Burnt the Chicken!

Just kidding! well not really. I did burn it on purpose! And it is delicious! This is the meal that was made after Easter.

This is Easter and this is why I just did not feel like cooking!

 I google searched cute Easter cake ideas and found ideas similar to this, but apparently Someone, I don't know who exactly was overheard laughing and calling it "Jabba the Hut" Sheesh people... really? I worked hard on that cake!

These are just sooo addicting! Really.... my hand would not stop picking them up and putting them in my mouth! Yum! Thanks Sweetie!

Ham. Game Hens, Mashed Potatoes, gravy, Deviled Eggs(Thanks Mom!), Salad, Vegetables, Applesauce....

Cooking cleaning and cleaning some more....
Man, I'm Tired!

Brings us back to...

Burnt Chicken!

So easy to make:

Mix together
1/2 cup Melted Butter
1/2 cup Oil ( I used Olive)
1/2 cup Chicken Broth
1 TBSP of your Favorite Seasoning. ( I used Roasted Garlic and Herb Seasoning)

Drench your chicken ( I used Chicken Thighs) or maybe you can marinate, but I didn't.
Place on broiler pan, Skin side Down
Broil until dark brown, making sure to spoon mixture over to keep chicken moist. Takes about 20 minutes or so...unless your forget and set your oven on fire like I did! No! No! No! I'm just Kidding!
Flip your chicken and do the same until it looks "Burnt"

Microwave everything else. Like the vegetables and potato. Or whatever you want to eat with it!

Chocolate Brownies!

Are these Brownies? Why do they taste like Cake?
Chocolate Yum!

Interesting.... I really do not know. But regardless, these are tasty!

1 Cup Sugar
1/3 Cup Margarine
1 tsp Vanilla
3 egg whites
2/3 Cup Flour
1/2 Cup Cocoa
1/2 tsp Baking Powder
1/4 Salt
1 Cup Walnuts (Optional)
350 Degrees.
Grease pan.
Blend together first three ingredients, add rest of ingredients until mixed well. ( I added walnuts to mine!)
Spread in pan and bake about 20 to 25 minutes.
Yum!

Is That Oatmeal?

"Is There Skin on My Chicken?"

'No"

"Is That Oatmeal!?!?"

Oatmeal Chicken!
Got this recipe outta Betty Crockers New Choices Cookbook and it's Delicious! You should try it!

Recipe calls for 3 to 31/2 lbs of fryer chicken. I used about 4 pieces of chicken thighs.
2 Tbsp Margarine
1 Cup Quick cook Oats ( I used regular Old Fashioned, I have No Idea if this makes a difference!)
1/4 Cup Parmesan Cheese
1 tsp paprika
1/2 tsp pepper (p.s. I sprinkled my chicken with salt, I couldn't help myself...)
2 Egg Whites ( I just used 2 eggs, yolks and all!)

Remove skin from chicken!
In a heated 375 degree oven, melt margarine.
Mix everything together except eggs.
Dip chicken in eggs then in oatmeal mixture.
Bake uncovered about half an hour, turn and bake another half an hour, or until juices are clear!

What is This Supposed to Be?

I Got this recipe from http://peasinapod.typepad.com/peas-in-a-pod/2010/12/holiday-bakingrecipes-anyone.html. I made this for Christmas a couple of years ago and it is Delicious! So I thought I would make some again.

But it didn't come out the same. It was very soft and not crunchy the way toffee should be. I think maybe because I used Margarine instead of real butter. Or I didn't stir it long enough...

Either way, it was still good.

But

Next time I make this, and I will, I am going to be sure to use real butter!

Burrito Pads!

Not Burritos
O.K. I love Burritos. I make them all the time for lunch. I go through a ton of Tortillas or as some in this house call them: Burrito Pads.
Seriously, I have never heard them called that before in my life. And as far as I know Big Baby is the Only one who calls them that.
Home Made Burrito Pads


3Cups Flour
1 1/2 tsp Salt
5 Tbsp Shortening
1 Cup warm Water (About)

Mix flour and salt, cut in shortening till crumbly. Slowly add water.
Mix together till it comes away from side of bowl.
Knead on floured surface for about 5 mins or until its smooth. ;)
Divide into 12 even balls. Let sit for about 15 minutes. Roll into circles.
Cook about 2 minutes on one side, turn, cook another minute on the other side.

What Have You Done To My Potato?


What is This? Why Can't you just make Mashed Potatoes?


Parsley Potatoes!


















Well, I didn't have any gravy! Hahaha! Anyway, This recipe is perfect for picky eaters even though they complained at first and it's easy to make:

I used about 3(one per person, depending on size of potato, not the people your feeding!) potatoes, cut them up like your going to make mashed and cook them the same way But, don't cook till mushy, just tender or they will fall apart and you might as well mash them!

Then you make a lil' flour gravy.
1 Cup Milk
about 2 Tbsp Flour
and
1 Tbsp butter
Melt butter then slowley add Flour, pour in milk, wisking till it boils and cook, striring constantly for about five minutes.
Salt and pepper to taste.

Mix with potatoes, Adding a couple of Tbsps of Parsley. ( I used 2 palmfuls of dried)

Tastes Just Like Candy!

Honey Soy Chicken
You know, I was brining (salt and sugar for about half an hour) this chicken first and Big Baby came in, arms crossed and asked me what I was doing.

Well, Duh, I'm making dinner. But he sees the sugar on the counter. And says, " Oh I see, Sugar Chicken!"

Which I suppose is true, because it is kinda sweet.

Mix together:

1/2 C. Honey
2 Tbsp Soy Sauce
2 Cloves Crushed Garlic

Fry Chicken in 2 Tbsp of oil till brown. Drain excess oil.

Pour mixture over chicken and cook on Low Heat until it looks all glazy and chicken is done.
About 35 to 45 Minutes.

Don't Cheese me out!

So how do you make maccaroni with cheese and not cheese out? You give them Cake! Just kidding...

This is my version of Home Made Mac N' Cheese! I was out of Parmesan so it does not have it, but I did have some Mozzarella :)

Yum!
In a big bowl mix together:
3 eggs
2 cups Half and Half
Dash of Salt and Pepper
(your also supposed to add 1/2 cup of Parmesan Cheese.... )

Cook your noodles according to package directions ( I used Penne, long tube noodles with nice holes!)

Grade about 2 cups of cheese ( Or More or Less. I used Cheddarella :) and the Mozzarella )

Oil bottom of your pan, lay about half of your noodles down, cover with the cheeses - You can also add Ham, Chicken, Turkey or whatever.... If you want.

Lay rest of noodles and cover with rest of cheese.

Pour the egg mixture over all of it, evenly, and bake @ 350 degrees for about half an hour.

Naked Chicken Thighs

So, I'm in the kitchen getting dinner started, when I feel a presence, I turn and...

"What are you making?"
    Chicken.
"What kind.?"
    With Honey and Lemon.
"Oh. I see. Naked Chicken."

Heat 1 Tblsp oil add Chicken, sprinkle with pepper


Fry chicken over med high heat till brown on both sides... Reduce heat to low....


Mix together 1 Tblsp lemon zest, 1 Tblsp Honey and 2 Tblsp lemon juice
Pour mixture over chicken, cover and cook about 30 minutes or until chicken is done.

Yum!

 I was just goofing off the other day, playing around on the Internet!

I was exploring www.pinterest.com , I was on Twitter and Goofed off on Facebook! I spent practically the Whole Day on the computer! The Whole Day!

Did I COOK? Nope! Went to Wendys and had some kind of Chicken Guacamole Sandwich! Oh man it was Good!
My sandwich did NOT look like this! Hahaha!

Then, Back onto the computer! Hahaha! I found a great new pattern that I feel excited about making, cuz honestly, after Christmas, I felt so burnt out on any type of knitting! ( I do not have any pics, I forgot to take any before I gave everything I made away! Dummy!)

I did start on a new hat.... and it took me three days to get that going! Gee.... And I'm still not into it! Hahaha! :p
I cast on 80sts on US 8 working a 4x4 ribbing.... :)


But I found this!  It's so cute! It has pockets! How cool is that?
