Somethin Fishy Going on Here

Well, Hmm, you know it's funny how sometimes I try to make something healthy for dinner... and When I say healthy, I mean that it's usually a piece of fish... and it's usually covered in butter and lemon and it's usually always salmon... like this:


There is no butter in this!
O.K., This recipe was originally meant for chicken! But I think it came out pretty tasty for this fish!

Use:

1 tsp chopped up/ grated lemon peel

1/4 tsp salt

1/8 tsp (dash) pepper

1 Tbsp lemon juice

There's more to the chicken recipe than that, but that's all I used to soak my salmon in.

Stick 'em in the oven at 350 for about 20 minutes.....

And dinner's ready!

Served with some roasted potato wedges and broccoli... And the most enjoyed part of this dinner was the bread!
Scrape, scrape, scrape...scrape your fish off.... Oh my gosh I won't eat that! What did you do to my food?
Tell me now, what's really for food? Can we have ice cream later?
 " Scream until Daddy (mommy) stops the car!"
The best part about making fish for dinner is that we always usually get ice cream later! So much for healthy! hahaha!

It's Showtime! Rotisserie Chicken



Chicken, Green Beans and Baked Potato

Mix: 2Tbsp Butter, 2Tbsp Lemon Juice, 1Tsp Salt & 1/2Tsp Pepper


Smother in Butter, Salt and Pepper. Under the skin too!

These Machines Are Great!

 You can always put this in the oven to roast...At about 375 for about 1/2 hour per pound.

Burnt Bread
It set off the Fire Alarm! Oh Man! Seriously... House was full of smoke... I had the exhaust vent on full blast! Grabbing a chair, pulling it over to reach the Alarm... Trying to figure out how to turn that sucker off! No Help... Just laughing in the back ground! So, I mean really, my perfect dinner was about ready to serve and I burnt the bread! So I quickly made some more bread.
Well guess what?
Yeah I burnt that bread too! And Set the Fire Alarm off Again! (no pic, just frustration, I quit!)

Tuna and Noodles

Tuna and Noodles :



 I'm looking through the cupboards, huffing and puffing loudly about having nothing good to eat. Hoping to go pick up some fast food some where. :)

Oh No! Don't say it... Nooooo!!!!!
Man, I do not like tuna with noodles. Yuck. And yet it is a food staple here.

Yeah, it's easy to make and I suppose it's good for you... Is it?

One bag of Noodles.
Two cans of tuna packed in oil.
Thats it. Boil the noodles, drain noodles, open and dump contents of tuna into pot, oil and all.
Mix it all up.
Salt and Pepper to taste. (It really needs "taste" hehe)

Blech!

So I jazzed mine up a bit...

Mashed Potatoes 'N Gravy

Who doesn't love mashed potatoes and gravy? Soft and creamy goodness. Homemade is the best! And you know it really doesn't take much to make them.

I don't know, but when added to a meal, they just seem to make it feel special, you know?

And I love that. I love when I actually remember to go make dinner and have the time to peel 'em up and surprise my dinner guests! (minus 1, only person I know that won't eat them!)

I use at least one potatoe per person, about medium size, peel 'em up, cut into fourths. I cover them with milk to just barely and let simmer down...

When the liquid is almost gone and they get pretty mushy, I cover them in a ton of butter! At least a half cup, give or take.... And just whip 'em up in the pot! Salt and pepper to taste...

Don't forget the gravy!
I use some pan drippings ( About a quarter to half a cup...) to about a cup of water and stir in about a Tbsp of cornstarch mixed with a little bit of cold water.... stir in slowly until it boils and thickens....

*Warning: This meal does use a lot more dishes that I like washing... But it is One of the most yummy dinners I make!

Hey! Party Chickens! Throw your wings in the air! Party like ya just don't care!

Poor, poor lil' cornish game hens....
Rinsed, patted dry and cut in half

Did you know that these lil' guys are only about 5 weeks old? I had no idea either!

So here they are covered in spice:


 A couple of teaspoons of thyme and rosemary, about 2 teaspoons of paprika and 1 teaspoon each of salt and pepper. Mixed all together with about a tablespoon of olive oil.


Now, you can put these on the grill if you like, but I put mine in the oven for about an hour at 350 degrees.
