Sunday

Well, this is my third post and I feel like I'm floundering. Fry me in butter! Well I didn't put anything up yesturday, but I really am having a hard time trying to wax poetic about my dinner time blues. Yesturday though was nice, I did not cook. Actually, I haven't made dinner since Thursday. Friday went to Polly's for their chicken dinner, always good. Yesturday we went to Fudruckers. Now, it is a pretty cool place to go, alot of memorabilia all over, but seriously, the price you pay for a burger, I was very dissapointed.
Today though I made :

Chipotle-Glazed
Chipotle-Glazed Roast Chicken With Sweet Potatoes Roast Chicken with Sweet Potatoes

Makes: 6 servings
Prep time: 15 minutes
Cook time: 35 minutes
Ingredients
4 sweet potatoes (10 ounces each), peeled and cut into 1-inch pieces
2 1/2 tablespoons olive oil
4 chipotle chilies in adobo sauce, minced
2 garlic cloves, minced
2 tablespoons honey
2 teaspoons cider vinegar
1 1/4 teaspoons salt, plus additional to taste
1 teaspoon cumin
1/2 teaspoon cinnamon
6 boneless, skinless chicken breasts (2 pounds), rinsed and patted dry
Chopped cilantro, for garnish (optional)
Directions
1. Preheat the oven to 400 degrees. In a medium bowl, toss the sweet potatoes in the olive oil and scatter on the bottom of a roasting pan. Roast for 15 minutes.
2. In a small bowl, mix together the chilies, garlic, honey, vinegar, salt, cumin, and cinnamon to make a paste. Rub the paste evenly over each breast.
3. Place the chicken breasts on top of the sweet potatoes and roast until the chicken is just cooked through, about 25 to 30 minutes. Serve garnished with cilantro if desired.

This was delicious! Although, next time I make it, I will de-seed the chiles! Plus I kinda used the whole can (7 ounces)  instead of counting out 4 lil chiles. but it was quite good.

Waffles! The other Dumpling!

Mmmm... waffles. Thats whats for dinner tonight, yummy yes but a far cry from the dumplings they started out to be. Yesterday I finally got my homemade egg noodles made, picked the chicken and moved on to making the dumplings. Easy enough, right? I use Bisquick, just add milk. Not me, I also put in an egg and oil. Yeah, I made waffles!
