Baanaaannaaa Bread!


"Give me some of that!" But it's for Thanksgiving. "I don't care, I can smell it and I want some!"
Banana Bread

Yes This Banana Bread was for Thanksgiving Day. Yes, Someone Ate some of it! It wasn't me! Grr...

Old Recipe
I double this.(In parenthesis) Good thing too, or I wouldn't Have any left for Thanksgiving! And I don't remember where I got this recipe from... probably my mom.... and who knows where she got it from... probably off the back of the flour package years ago... haaha!

Banana Bread:

(1) 1/2 C Butter
(2)1    C Sugar
(4)2        Eggs
Oh just a Pinch of Salt!
(2)1 Tsp Baking Soda
(4)2    C  Flour
(1)1/2 C Nuts
2 1/2) 1 1/4 C Bananas ( I use about 4 and a half bananas (in the doubled recipe),cuz I ain't going to mush them up and measure!)

You need two bowls! Some people put it all in the same bowl, I don't know why, I just can't bring myself to do that! So I use two bowls, but I guess you could just put it all in one big bowl.... Anyway...

Cream sugar and butter. Add Eggs, mix well.
Sift flour, salt and soda.
Add to sugar and butter.
Alternate mixing together flour and bananas.
Add nuts last.
Bake 350 degrees for about and hour.

That's what we had last night for dinner.

I am so tired! Tired of Mondays. Tired of cooking. Tired of WASHING DISHES! I am so tired of the Dust! It comes through the windows.. I can't dust enough... Grr....  And Tired of the Laundry!

And the stupid dryer today, thought there was a  "child" in it, so it wouldn't start.... Serious....

And every time I try to upload a pic on here... It takes Forever! Then I forget what I was going to say...

And Mondays... I get to move the cars off the street! Street sweeping day! They should change the days... I mean really, sweep on Mondays but then pick up trash on Weds? That makes no sense to me!

Oh and I have pics of the Tuesday Night Early Wednesday morning Trash Pickers! I Shall Post them soon!

But I must leave you now to do what ever wonderful life thing you do, because I need to put the cars back on the street!

Shake 'N Bake!


Hey! Why can't you just make Regular Shake "n bake chicken?

Oh! Well O.K.

You know, you can't really blame Me for this. They put this "recipe" on the back of the box! I mean it takes up the whole back! You'd  have to be a real Shake 'N Bake connoisseur to realize that the "Easy 10 Min. Prep" directions are on the side of the box!
So Yeah, I dumped 1/2 a cup of Ranch Dressing all over the chicken! And following directions like a good lil girl, I put it in the fridge to marinate for 30 mins.... lalalalala....

Wait a minute... somethings not feeling quite right here.... Ack! What was I thinking covering the chicken with Ranch! They Won't Eat It!  So I immediately rinsed it off! ( well I left it on mine, just to see, and it was really tasty!)

Pot Roast Chicken in a Pan!

Oh my gosh this was sooo good!


Olives! Why are there Olives in this! Normal people don't cook Olives!

Again, I got this outta Betty Crockers New Choices Cookbook! That books been sitting around in the kitchen for awhile... but since starting this here blog thing, I have been looking around for yummy recipes that those picky eaters will eat!

And really, who doesn't love a pot roast?  I usually make one outta meat! But I just had to try this...

And It's Delicious!

You gotta try it!

About 3 pounds of cut up broiler fryer chicken ( well I don't have that, I have been on a chicken thigh kick for some reason..)

1/4 C Flour
1 tsp dry Basil leaves
1/2 tsp dry Oregano leaves
1 tsp Paprika
1/4 tsp Pepper
1/4 tsp dry marjoram ( yeah well, I don't have any. I'm not even sure what that is. So I had some Herbes De Provence that I used instead! Hehe)


Can you see the Lavender from the Herbes De Province?
2 Tbsp Oil ( I used 1 Tbsp Olive and 1Tbsp Vegetable, cuz I think I'm all healthy like that!)
1 C Chicken broth ( or white wine)

12 small pitted Olives
8 Med Carrots, cut into fourths ( I used those 'lil baby ones, a handful, cut in half!)

8 whole small Onions ( I used the half that I had in the fridge, just sliced in big pieces) I did! I did! I put Onions in it! Hahahahahaa! Oh yeah baby! I did it!

4 med Baking Potatoes, cut into fourths
1Tbsp Cornstarch
1 Tbsp Water
Coat chicken with flour and spices....

Cook till Brown on both sides, about 15 mins
Remove Chicken...
Stir in Broth and Vegetables...
The Vegetables!
Add Chicken
Heat to boiling. Reduce heat. Cover and simmer for about 40 minutes... Till chicken is done. :)

Whats For Food? I'm Hungry!

Take the chicken and veggies out of the pan. Mix together the cornstarch and water, slowly stir into pan juices... Yeah, no picture here... apparently I did not have enough pan juice so my gravy turned into a big gelatinous lump! Haha!

Ooh! A Special Potato!

Betty Crocker New Choices Cookbook
Yeah, I spent quite awhile in the kitchen looking for something for dinner. Well at least something I could make with what I have. Save me a trip to the market and apparentently I wasn't being sent to Taco Bell or getting a pizza!

Well this looked good, I mean I have mustard and I have a half dead rosemary plant out in my garden... So I went out and cut off some of the good part.

So anyway...

The Ingredients
3 Tbsp Sour Cream
3 Tbsp Dijon Mustard
2 Tsp Fresh or 1Tsp dried rosemary leaves, crushed. (I just chopped mine up with a dull knife till I got tired!)
1/4 Tsp white pepper ( I don't have "white" pepper, so I used "black"....)


Coating with Marinade, at least 3 hours! haha!



I mean really, hahaha, you think I have 3 hours to marinate? I goofed off till the oven was ready! Hehe!
Preheat oven to 400 degrees. :)
Cook for about 20 mins.

And your supposed to use skinless Boneless chicken thighs. I skinned my own and left the bones in them! So they havce to cook a lil longer... Actually mine were in the oven for about 45 mins or so..



Happy Buttered Pan!

Yeah, recipe says to spray with nonstick blah blah blah.... I Love Butter! It makes my pan Happy!


When I realized what I had done...
I mixed not only Mustard but Sour Cream. Together. And put it on Their food.... I had to make amends....
So I microwaved some potatos... and gutted them...

Guttless!




Little Butter, salt and pepper, then whip!
Stuff it back into the potato and cover with cheese, put in oven with chicken till cheese melts...

That Was Tasty, But Don't Do It Again!

Oh my gosh! This was like a friend food frenzy! Once I poured oil in the pan I just about fried everything! I had to stop myself before I fried all the biscuits! Not every one was as excited as I was was about this fried food adventure! (That was Tasty...)



The way I done did it:

Roll your washed and dried chicken ( I used chicken thighs, skinned) in about 2 cups Bisquick (Or use flour) mixed with about a tsp of salt and about a 1/4 tsp of pepper. (Or use whatever your lil' heart desires to season with).

Fry in about an inch of oil until nicely browned. I Threw the chicken skins in too for flavor! Keep warm while frying the biscuits and french fries (use bagged store bought or make your own).

Make biscuits (Using recipe from Box). Use some of the dough and fry. Or you can fry all of them. :0) Bake the rest in the oven.

Ooh Gravy!

Take about 1/4 cup of the pan oil (In a separate pot) and about 1/4 cup of flour, wisk together, pour in about 31/2 cups of milk, salt and pepper to taste. I used a lot of salt and pepper! Just tasted so flourery (?)


Oh the things you can do when you got yourself some Bisquick! Yum! I wish I would have made more of the fried biscuits though!

Somethin Fishy Going on Here

Well, Hmm, you know it's funny how sometimes I try to make something healthy for dinner... and When I say healthy, I mean that it's usually a piece of fish... and it's usually covered in butter and lemon and it's usually always salmon... like this:


There is no butter in this!
O.K., This recipe was originally meant for chicken! But I think it came out pretty tasty for this fish!

Use:

1 tsp chopped up/ grated lemon peel

1/4 tsp salt

1/8 tsp (dash) pepper

1 Tbsp lemon juice

There's more to the chicken recipe than that, but that's all I used to soak my salmon in.

Stick 'em in the oven at 350 for about 20 minutes.....

And dinner's ready!

Served with some roasted potato wedges and broccoli... And the most enjoyed part of this dinner was the bread!
Scrape, scrape, scrape...scrape your fish off.... Oh my gosh I won't eat that! What did you do to my food?
Tell me now, what's really for food? Can we have ice cream later?
 " Scream until Daddy (mommy) stops the car!"
The best part about making fish for dinner is that we always usually get ice cream later! So much for healthy! hahaha!

It's Showtime! Rotisserie Chicken



Chicken, Green Beans and Baked Potato

Mix: 2Tbsp Butter, 2Tbsp Lemon Juice, 1Tsp Salt & 1/2Tsp Pepper


Smother in Butter, Salt and Pepper. Under the skin too!

 You can always put this in the oven to roast...At about 375 for about 1/2 hour per pound.

It set off the Fire Alarm! Oh Man! Seriously... House was full of smoke... I had the exhaust vent on full blast! Grabbing a chair, pulling it over to reach the Alarm... Trying to figure out how to turn that sucker off! No Help... Just laughing in the back ground! So, I mean really, my perfect dinner was about ready to serve and I burnt the bread! So I quickly made some more bread.
Well guess what?
Yeah I burnt that bread too! And Set the Fire Alarm off Again! (no pic, just frustration, I quit!)

Tuna and Noodles

Tuna and Noodles :



 I'm looking through the cupboards, huffing and puffing loudly about having nothing good to eat. Hoping to go pick up some fast food some where. :)

Oh No! Don't say it... Nooooo!!!!!
Man, I do not like tuna with noodles. Yuck. And yet it is a food staple here.

Yeah, it's easy to make and I suppose it's good for you... Is it?

One bag of Noodles.
Two cans of tuna packed in oil.
Thats it. Boil the noodles, drain noodles, open and dump contents of tuna into pot, oil and all.
Mix it all up.
Salt and Pepper to taste. (It really needs "taste" hehe)

Blech!

So I jazzed mine up a bit...

Mashed Potatoes 'N Gravy

Mashed potatoes on the left!
Who doesn't love mashed potatoes and gravy? Soft and creamy goodness. Homemade is the best! And you know it really doesn't take much to make them.

I don't know, but when added to a meal, they just seem to make it feel special, you know?

And I love that. I love when I actually remember to go make dinner and have the time to peel 'em up and surprise my dinner guests! (minus 1, only person I know that won't eat them!)

I use at least one potatoe per person, about medium size, peel 'em up, cut into fourths. I cover them with milk to just barely and let simmer down...

When the liquid is almost gone and they get pretty mushy, I cover them in a ton of butter! At least a half cup, give or take.... And just whip 'em up in the pot! Salt and pepper to taste...

Don't forget the gravy!
I use some pan drippings ( About a quarter to half a cup...) to about a cup of water and stir in about a Tbsp of cornstarch mixed with a little bit of cold water.... stir in slowly until it boils and thickens....

*Warning: This meal does use a lot more dishes that I like washing... But it is One of the most yummy dinners I make!

Hey! Party Chickens! Throw your wings in the air! Party like ya just don't care!

Poor, poor lil' cornish game hens....
Rinsed, patted dry and cut in half

Did you know that these lil' guys are only about 5 weeks old? I had no idea either!

So here they are covered in spice:


 A couple of teaspoons of thyme and rosemary, about 2 teaspoons of paprika and 1 teaspoon each of salt and pepper. Mixed all together with about a tablespoon of olive oil.


Now, you can put these on the grill if you like, but I put mine in the oven for about an hour at 350 degrees.

Entrelac and Baked Chicken!

Yes I know dinner's not ready yet, but look what I made! An entrelac bag! Yay for me! I did it! It was a little confusing at first, but the method I used was pretty simple ( Two vids I posted on youtube, the rest to follow). I am so proud :)
Well, except for this... I have to remember to pay attention !

So yeah, back to dinner.
I used the simple Bisquick recipe on my chicken, yes chicken, you expect some thing else? Haha! yeah I know I have been doing alot of meat dishes lately!

I use skinless boneless chicken breasts, so of course you have to decrease the cooking time. It is a tasty bite, but next time I think I will add some type of spice, maybe chili powder or something! Bland... But that's they way "they" like it! Oh well!
I did spice up the potatoes though! And, Look! I was so hungery after all that knitting, I took a bite out of the bread! Haaha! Oh well...

Two Rights, So Wrong

Well I was happily working away on these really cool wrist warmers from a pattern I found in The Stitch n'Bitch Nation book that I got from the library. At first it was a lil' difficult for me, learning how to cable, but after awhile I got it! I Finished the first one! Yay! And immediately started on the second one, really getting into it, cuz by now, you know I have become an expert. And Then...

Goodness Gracious! Great Balls of Meat!

This revolt against chicken really leaves me helpless as to what to make for dinner. So I took out some hamburger meat. Hmm....

I don't like ground up hamburger meat. Why do they call it that anyway? Ham. burger. There is no ham in it.
So here I am again rifling through the cupboards and staring into the fridge for ideas. When suddenly...

I found this!




This was easy to make and delicious! The rest of the meal was simple too, I just added a little bit of noodles and sauce and a side of vegatables!

Fire!! No,I'm Just Making Dinner!

Yeah well, sometimes I just don't feel like dealing with raw chicken. But I had one thawed out and sitting in the fridge. So anyway, I had no choice. Everything was going smoothly until I remembered that I forgot to fill the bottom of the pan with water and broth, oh, after it has been cooking for almost half an hour. Hot oven. Hot pan.
So I opened the oven,
poured it in...

(Sorry, no picture) Smoke coming out of oven... crackling, spatering noise)

Guess what happens....
Yeah I set off the smoke detectors!
But thats not the good part.
No one got up to see what happened. Really?
Moms just in the kitchen, cooking. :)

How big are your waffles?

The box of well known handy dandy all purpose mix says it makes 12. See the one on top? Yeah , that size. Who does that? See the one on the bottom? Thats how I make mine. yep, makes 3. I can eat all three. Serves no one else but me. Then I'm out of batter.

Great Lunch! It's Not Chicken and Yarn!

Serious, have you ever just had one of those days? Yeah well, mine just keeps going and going and going...  Ack!
Sometimes you just have to stop. So I did. And so I made lunch:

Cook it up!


Make Garlic bread, add cheese

Add more cheese!




Place meat and eat!

These are plain because I feed very picky eaters but don't let that stop you from adding all the good stuff that you like!
So it came out really tasty, the zombs were happy and surprised (Not Chicken!) and gave me time to Take a breath and start over.
So back to this:

I continuously made mistakes, just not paying attention, over and over and over... Sheesh (no pics of that though!) After lunch it all started to work out! Yay!
