Yeah well, sometimes I just don't feel like dealing with raw chicken. But I had one thawed out and sitting in the fridge. So anyway, I had no choice. Everything was going smoothly until I remembered that I forgot to fill the bottom of the pan with water and broth, oh, after it has been cooking for almost half an hour. Hot oven. Hot pan.
So I opened the oven,
poured it in...
(Sorry, no picture) Smoke coming out of oven... crackling, spatering noise)
Guess what happens....
Yeah I set off the smoke detectors!
But thats not the good part.
No one got up to see what happened. Really?
Moms just in the kitchen, cooking. :)

Great Lunch! It's Not Chicken and Yarn!
Serious, have you ever just had one of those days? Yeah well, mine just keeps going and going and going... Ack!
Sometimes you just have to stop. So I did. And so I made lunch:
I continuously made mistakes, just not paying attention, over and over and over... Sheesh (no pics of that though!) After lunch it all started to work out! Yay!

I boiled them both and used the recipe on the back of the bag for a quick homemade mac and cheese. Both the chicken (ready to heat and eat) and noodles were in the oven cooking together and of course just microwave the veggies!

Best dinner you ever made!
But then the hungry zombies come about marching slowly towards me... " Whats for Food?"
The most effort I actually put in this meal was the potatoes! Yeah and you know those lil' recipe cards they have in the grocery? Thats what I used! (Don't tell my family!) Here it is: Reynolds Wrap homestyle fries
It calls for about 3 large potatoes,quartered, but whatever, I use 1 potatoe per person, and if you use more just increase the spices!
2 TBS olive oil
1 tsp chili powder
1/2 tsp salt
1/4 tsp ground cumin
Put all in a big bowl and mix, spread on cookie sheet and bake!
450 oven for about half an hour!
Finish it off with microwaved veggies! Always! haha :) and Yum!

ELvis Loves Hats!
Whats for Food? Oh my gosh! I forgot about dinner! Again! This is why....
I got new 10.5 circular needles and I had a scarf I was working on that was unfinished, so I broke the yarn and started this hat! What I love is the pom pom that I learned to make.Now I just want to put pompoms on everything! I also learned that the chicken I planned to make was still frozen! Off to Wendys for burgers!

Forgot about dinner Chicken!
So anyway, I forgot all about dinner, until dinner time. Thats when I opened the freezer and took out the chicken, plopped it in the sink and poked it. Yep it's frozen. So we went to Wendy's and had cheese burgers!
So It has been thawing over night ( in the fridge of course)
It has been rinsed, patted dry and sprinkled liberally with salt.
Next, Melt some butter and wash a lemon.
Mix your herbs, I used about equal parts of rosemary, thyme and sage, I would say about a teaspoon of each, i usually just guesstimate. (chop, grind and smush all together!)
Then I rub the herbs all over the chicken, put spoonfuls of butter on it it till it looks happy, then squeeze the lemon juice all over it. (And pick off the seeds!)
Oops, oh yeah, preheat your oven to 375. hehe, it's the little things....
I start mine on its belly for about an hour, then flip it over for another half... more or less depending on how big that sucker is!
Enjoy!
